I made french fries last night. Both white potato and sweet. Used the air fryer, no oil, except what was on the fry when they came out of the bag.

Roasted in olive oil, with himalayan salt and black pepper. Maybe a little tumeric thrown on. Baked. Then smashed on the cookie sheet and roasted till they were crispy brown.
But for the most part we have been eating quinoa as our starch side dish. Sometimes making protein bowls complete with veggies, avocado, and egg/salmon/chicken (pick one).
Occasionally polenta, with butter (the Irish kind), parmesan cheese (from the green container, not the good Italian kind-my bad), and a poached egg on top.
Organic oatmeal (cooked in water) with chia and flax seeds for breakfast.
I have found a gluten free pasta that is actually edible and I have enjoyed that instead of trying to make a sandwich for lunch.

Ok, I admit it, if that were the goal I would be giving up wine, and milk chocolate, too, but that is not going to happen…at least for the near future…
